About Crust & Crumb Academy

Members get structured sourdough courses, weekly Saturday bake-alongs and monthly baking challenges.[1] The courses build on one another: Starter 101 takes members through the first seven days of making a starter, Pre-Ferments: The Architecture of Flavor deals with levain, poolish, biga, sponge and pâte fermentée, and The Two Techniques That Changed My Bread teaches fermentolyse and the Rubaud method.[2] Other sections include The Dough You Know, on reading dough by sight and feel, a Recipe Pantry, The Mill, which converts recipes between sourdough and yeast, custom baking tools, and a glossary defining 132 terms in plain language.[1][2]

Hunter also founded Baking Great Bread at Home, which runs a blog alongside the academy.[1][3] A sister course, From Oven to Market, is for bakers who want to sell what they bake, and the book Sourdough for the Rest of Us is offered free as a starting point.[3] On YouTube, Hunter explains the science of why bread works, posts sourdough tutorials aimed at real home kitchens, and covers troubleshooting.[4]
